The Sirloin is the cut next to the Rib Eye as you run along the Roasting (The loin and the ribs together) which is the piece of beef I aged in my recent beef series.  Its ridiculously delicious, the perfect steak.  This short horn sirloin has plenty of marbling to ensure maximum depth of flavour and increased peace juiciness.  Cook it between medium rare to medium well and make sure you rest if for a minimum of 5 minutes.

We tried Royal Mail out, but the GB postie couldn’t handle the deliveries and a lot of your packages went missing.  So, I’m using DPD to deliver this time and I’ve got state of the art recyclable lamb’s wool insulation, re-useable ice packs and recyclable cardboard boxes.  I’ve tried to keep packaging to a minimum and not use plastic where ever possible.  It’s a bit more expensive but better to do a proper job ah.
